First course:
Charcuterie plate of meats and cheeses
Paired with: Chambourcin (bright and vibrant with aromas of blueberry, pomegranate and brambles. On the palate are flavors of red fruit, and blackberries. Six months of new oak round out this smooth and easy drinker.)
Second Course:
Bourbon Glazed Salmon / served with roasted asparagus
Paired with: Pinot Grigio (Mature rose petals, lychee fruit, ultra-ripe peach and a hint of white pomegranate all unfold in this drier, Italian style white grape variety.)
Third Course:
Lamb Lollipop / served with Jack Daniels sauce on creamy polenta
Paired with: Cabernet Franc (Dark plum, blueberry. Leather and pepper. The palate gives way to flavors of boysenberry, bitter-sweet chocolate. Subtle tobacco, and black cherry. Aged nine months in American oak.)
Dessert course:
Cannoli / hand filled and dipped in Belgian chocolate
Paired with: Vasara Peach (Peach, peach, peach! With an apricot finish)
